Egg Nog…

Cooked Egg Nog

12 eggs
1/2 cup sugar
1/2 tsp salt
2 quart raw milk with cream (if using store milk, use half heavy whipping cream)
2 tsp vanilla
1/2 tsp cinnamon
1/2 tsp nutmeg (optional: I let people garnish with this, since I don’t like nutmeg in my nog)

PREPARATION:

Beat eggs, sugar and salt together in a saucepan. Stir in half the milk. On low heat, cook until mixture is thick and thinly coats a spoon. Make sure to stir constantly. Remove from heat and mix in the last of the milk and the vanilla. Personally, I like mine cold; so I chill mine first.


While we are enjoying this beautiful season (ice storms and all), sickness has blown through our family. Right now, my sweet husband is battling the tail end of the flu, and its aftermath. I thought y’all might enjoy his post from this morning. It’s so neat how, in the midst of a trial, God blesses us in unexpected ways:

For the past week, I’ve been struggling with the flu. I haven’t had much of a temperature, but I’ve been very congested, my throat has been inflamed, and I’ve suffered continual headaches. On top of this, I‘ve been coughing – and coughing and coughing. Especially at night. Stacy has been a great nurse, pumping me with loads of remedies; but, while I’m sure they have helped, this illness has hung on with a vengeance.

God is so good. During our trials, He always seems to reveal His love for us in the midst of it. Last night, I had a visit from another nurse. It was about 3:00 a.m. and I was having a coughing fit; one that wouldn’t stop. I was exhausted and feeling quite frustrated with the whole ordeal. In the middle of this, our seven-year-old Virginia Grace came into the room with her blanket in hand.

This is not unusual in the McDonald home. One or more of our children can be found sleeping with us, or piled on the floor with pillows and blankets, on any given night. A bad dream or a moment of loneliness is an acceptable excuse to come cuddle with mom and dad.

But last night was not a regular night. I was struggling to breathe with the congestion and I could not get the coughing to subside. So, I looked at Grace and said to her, “Honey, you can’t sleep in here tonight; Daddy is just too ill.”

Grace’s response warmed my heart. She said, “I know that Daddy; I didn’t come to sleep. I heard you coughing and I just brought you my blanket, so you would be warm.”
With that, she put her little blanket on top of her big daddy, kissed me on the cheek, and went back upstairs to bed.

This was one time when this Daddy didn’t mind having the flu. Nope. Not one bit.

    Oh, Stacy, I love the idea of COOKED eggnog! I always thought it had to be raw, and it grossed me out, so I would never make it or drink it (I have always called raw eggnog “French toast batter”). I will try the cooked eggnog. My husband will love it! I have always bought his eggnog at the store, because I could tell that store-bought was somehow different from homemade “French toast batter”. Ha-Ha. The store-bought stuff is undoubtedly cooked. Thank you so much.

    Children are indeed a blessing. My 5 year old earnestly said we didn’t need Oma to come over and help when I couldn’t stay on my feet due to a vicious tummy bug. He said he’d take care of me, hold “the bowl” for me, and look after little brother and sister. Bless!

    Stacy, I don’t always agree with you, doctrinally/theologically speaking, but you have raised up children in the Lord in such a manner one doesn’t often hear about these days. What a sweetie pie to her daddy!

    I had the same flu bug James did around Thanksgiving; my little guy toddled in one day, and all I heard was, “Ma? Ma!” and felt something set down next to me, as he toddled off. I opened my eyes, and realized he had given me Bawk Bawk, the big eyed Penguin he loves to cuddle. :) If only a lovey could solve all our adult problems! ;)
