Medieval Salad
1 small head of butter lettuce
2 small heads hearts of romaine or red leaf lettuce
¼ C. fresh mint leaves
¼ C. fresh tarragon leaves
1 cucumber pared and slices
2 boiled eggs sliced
4 T. olive oil
3 T. white wine vinegar
½ tsp. salt
1/8 tsp. pepper
½ tsp. brown sugar
Radishes
Green onion
Fresh parsley
Wash lettuce, flowers, and fresh herbs in cold water and pat dry and refrigerate. Tear lettuce into bite sized pieces and combine with watercress and herb leaves. Add cucumber slices and toss to mix. Mix together oil, vinegar, salt, pepper, and sugar. Stir until blended. Add dressing to salad and toss until well coated. Gently mix in the flower petals. (Reserve a few for garnish) Top with eggs slices and garnish with reserved flower petals.
